A culinary journey by Fi’lia at Baha Mar

Celebrity Chef Michael Schwartz, the mastermind behind the Italian menu crafted for Fi’lia restaurant at SLS Baha Mar recently treated Eyewitness News to over one dozen dishes which are featured at the swanky restaurant.

Savory dishes such as Italian meatballs and pasta stole the show, a unique take on the Bahamian conch fritter tantalized taste buds, while kale took centre stage as a topping for a new take on Italian pizza.

The evening was topped off with over five specially crafted desserts.

“I think people like it because they are attracted to the familiarity, but also because we offer interesting and different interpretations of what people typically consider ‘Italian’,” noted Schwartz.

Lionfish was the main dish for the night.

It’s an invasive species in The Bahamas, so the restaurant decided to show EWN what they could do with the exotic fish.

Sarah Fare, a tourist visiting from New Jersey said, she fell in love with one of the restaurant’s hot sellers, the Caesar salad.

She was also over the moon to meet the celebrity chef face to face.

“The experience was great and my favorite dish was definitely the table side Caesar. It’s the best appetizer I’ve ever had,” said Fare.

“Getting to meet him was really cool…  I usually see him on TV so to see him here, while dining, shows how much he actually cares about the restaurant.”

Fi’lia is one of 39 restaurants and bars at the billion-dollar Baha Mar.

In the end, Schwartz presented media representatives with a signed copy of his cookbook, “Michael’s Genuine Food”.
