NASSAU, BAHAMAS — Carnivale Bahamas, a Latin-fusion restaurant, marked its grand opening over the weekend, introducing the vibrant energy of the iconic Chicago eatery to Paradise Island.
The weekend-long extravaganza featured an array of vibrant entertainment that showcased the very best of Bahamian culture. Guests were treated to performances by top bands and DJs, mesmerizing salsa and samba dancers, and astonishing fire dancers and stilt walkers, all culminating in a lively and energetic Junkanoo rush. They enjoyed signature cocktails and an array of culinary delicacies only to be found at Carnivale Bahamas, which is destined to become the epicenter of excitement and energy on Paradise Island.
Deputy Prime Minister and Minister of Tourism I. Chester Cooper was the guest of honor at Saturday night’s celebration. Congratulating the owners for completing construction in record time, Mr. Cooper, who took part in the groundbreaking ceremony 18 months ago, thanked them for their confidence in The Bahamas.
“This is a great day for Paradise Island, this is a great day for The Bahamas and really, its an inspiration to other investors to come here and also experience the joys and hopefully the successes of investing in the Commonwealth of The Bahamas,” the Deputy Prime Minister said.
Cooper was presented with a unique gift by William Marovitz, co-owner of Carnivale Bahamas – an original mural of Sir Sidney Poitier receiving his Academy Award for Best Actor in 1964. The mosaic is made up of hundreds of tiny photos from Sidney’s life, which the actor’s widow personally provided for the project. Another highlight of the evening was the unveiling and dedication of the Sidney Poitier private room, designed as a tribute to the celebrated Bahamian actor and also featuring a number of photos from Sir Sidney’s personal collection.
Saying that he would treasure the mural, the Deputy Prime Minister added: “I am truly pleasantly surprised and delighted to see the recognition of an iconic Bahamian who has taken the spirit, the talents of The Bahamas to the world. I can’t wait to use this particular room at some point, really to be in Sir Sidney’s presence; I hope that his spirit will continue to inspire other Bahamians.”
The $12 million project is a centerpiece of the redevelopment of the Hurricane Hole Superyacht Marina at Paradise Landing and will employ around 200 Bahamians. Designed as a one-of-a-kind dining and entertainment experience, Carnivale Bahamas seamlessly blends indoor and outdoor spaces to create a vibrant setting for guests to enjoy world-class Latin-inspired cuisine and live local music.
Mr. Marovitz said: “I couldn’t think of a better place for the first Carnivale location outside the United States. The people are fabulous here, the environment is wonderful, the location is terrific. We want people to come in the door and be happy and entertained from the moment they walk in the door to the moment they leave. Great food, great service, great ambiance.”

More than 700 guests were regaled on Saturday night, including a number of local dignitaries. In addition to the Deputy Prime Minister, in attendance were Director of Tourism Latia Duncombe; Honorary Council of The Bahamas to Chicago, Michael Fountain; and former Member of Parliament Shane Gibson, among many others. Visiting VIPs included Super Bowl MVP and Hall of Famer, Richard Dent, a personal friend of the owners, who celebrated his birthday during the event.
As the flagship restaurant of Paradise Landing, Carnivale Bahamas offers an expansive 350+ seat venue, with both indoor and outdoor dining areas designed to showcase live performances and create a lively ambiance. The restaurant also features a top-tier cocktail bar, offering a mix of vibrant drinks that complement the dynamic setting.
